Walnut, Coffee and Halawa Cake

Halawa means sweetness in Arabic, I wanted to start the year with a special recipe and a combination of flavors different from what I usually make. I baked this walnut and coffee cake flavored with cinnamon and sweetened with halawa pistachio chunks. It’s Gluten Free, Egg Free, Dairy Free and made with simple ingredients.

What you will need to make this cake ;

Ingredients
– 1 1/2 all purpose flour (or Gluten Free all purpose flour)
– 2 tsp baking powder
– 1 tsp cinnamon
– 1/2 tsp nutmeg
– 1 tsp vanilla
– 1 cup walnuts , chopped
– 3/4 cup + 1 tbsp almond milk (or other non dairy milk)
– 1/4 cup coconut oil (or canola oil )
– 1/4 cup brewed coffee (liquid)
– 3/4 cup coconut sugar (or unrefined sugar , or white sugar)
– 1/4 cup halawa , chopped into small chunks

Topping
– 1 tbsp coconut oil
– 1 tsp cinnamon
– 1/2 cup walnuts

Preparation

1) Set the oven to 180 degrees and grease a loaf tin with non sticky oil or place a parchment paper if you don’t have non sticky oil (or 8*8 inch cake pan)

2) Add the Flour, baking powder, cinnamon, nutmeg and walnuts in a bowl and combine well

3) In a separate bowl, mix the almond milk, sugar, coconut oil, coffee and vanilla. Blend on medium speed until well combined

4) Add the flour and walnuts mix to the wet ingredients.

5) Fill half the tin with the batter then add halawa chunks in the middle then continue filling the batter. spread the halawa in the middle

6) Mix the topping ; coconut oil, cinnamon and walnuts and sprinkle on top of the batter

7) Bake for approximately 45 to 50 minutes , until a toothpick comes out clean
