Sometimes “real” food sounds exhausting and you just want something quick and easy to take with you as snacks, something like those tasty date, walnut and tahini balls made with 6 ingredients only and totally customizable!
I made them using walnuts, peanut butter, dates, tahini , vanilla and cinnamon. If you have allergy or don’t like walnuts or peanut butter, no problem at all. you can replace with almond or add some oats to it.
Those gems are dangerous ! so try not to eat the whole batch in one go … They’re tender , crunchy from the walnuts, have a nice aftertaste from the cinnamon and tahini and can be coated with different ingredients ; chocolate, nuts, matcha, coconut, cacao powder.
Ingredients (for 15 approximately)
– 3/4 cup walnuts
– 12 medjool dates (pitted or if dry soak in hot water for 20 min then drain)
– 1 tsp cinnamon
– 2 tbsp tahini
– 2 tbsp peanut butter
– 1 tsp Vanilla extract
How to prepare them
1) Add the dates to a food processor and blend for couple of minutes , add the cinnamon, tahini, vanilla extract and peanut butter and continue blending until all ingredients begin to stick and form a dough . I like the crunchy texture of the walnuts so i remove the date dough from the processor, chop the walnuts into small pieces and mix with the date dough. you can also add walnuts to the food processor if you prefer to have it completely blended.
2) Roll the dough into balls and place in fridge for approximately 20 min. remove them and coat with whatever you prefer, it could be coconut, walnuts crumble, other nuts, matcha, raw cacao powder or chocolate.
