Banana and Apple Muffins – Vegan, Gluten Free

These muffins are loaded with chunks of apples, spiced with cinnamon and a bit of nutmeg, which gives them a nice pop! Easy to make and perfect for a quick snack or breakfast to-go.

I’m becoming addicted to those muffins, I’ve made them three times so far and looks like I will be baking another batch this weekend. They’re adapted from a recipe shared in deliciouslyella cookbook who is a plant-based chef. They can be made with gluten free all-purpose flour or Spelt flour. I tried both, the same recipe works perfectly.

Ingredients to make around 12 muffins
– 2 Apples
– 3 medium ripe bananas
– 4 tbsp non-dairy milk (I used almond milk)
– 3 tbsp melted coconut oil
– 230 g All Purpose Flour (or Spelt Flour)
– 150 g coconut sugar or 3/4 cup
– 1 tbsp baking powder
– 1 tsp cinnamon
– 1/2 tsp nutmeg
– 1 tsp Vanilla


1) Preheat oven to 180 degree C and spray a 12-hole muffin tray with non-sticky oil

2) Peel one of the apples and cut it into small cubes . leave the other one on the side . Mash the bananas until smooth

3) Mix the dry ingredients ; flour, baking powder, cinnamon and nutmeg

4) In Another bowl, mix on medium speed the coconut sugar, almond milk, coconut oil , vanilla until well combined then add them to the flour mix

5) Add the mashed bananas and combine all ingredients well then add the apple chunks and give everything another good mix

6) Pour the mixture into the muffin tray

7) Before baking, cut the remaining apple in half, core it then cut each half into thin slices. Top each muffin with few slices and a sprinkle of cinnamon

8) Bake for 30 min until muffins are golden

Note : you may find that the dough looks quite thick, don’t be surprised with that, it will all come together perfectly when baked
