For my birthday this year i made a dessert table rather than one cake.. I had so many ideas and didn’t know what to make, so i made everything ! To accommodate everyone taste, i prepared vegan treats, gluten dairy free and also the normal sugary ones.
we had those raw vegan energy balls, chocolate hazelnut brownies, mini berries muffins, lot of donuts and lazy cake !
The Almond and Cacao energy balls were inspired by deliciously Ella, i love her account and the plant based recipes she shares. Those are now my favorite snack, very easy and quick to make and you can cover them with melted chocolate, crunchy nuts or just have them as they are. I made minor changes to Ella’s recipe, i reduced the amount of dates and added more almond butter and almonds because i love the almond taste and wanted to got more of it.
You will need only 5 ingredients , the quantity below will make between 20 and 25 , depends how big you like them.
– 3/4 Cup Almonds
– 3/4 Cup Medjool Dates (pre-soaked in hot water for 3 hours)
– 2 tbsp Raw Cacao powder
– 2 tbsp Almond Butter
– 1 tbsp Coconut Oil
1) Place the almonds in food processor until they are crushed then add Medjool dates and coconut oil , followed by Almond butter and Cacao and mix well.
2) Take a tablespoon and roll into a ball, continue until the mixture is finished and put them in fridge for at least an hour.
3) Store them in air tight container in the fridge, they last for at least 10 days
